Gnocchi bolognese

Serves: 4 people | Prep time: 5 mins | Cook time: 40 minutes

ingredients

  • 1 tsp olive oil
  • 1 brown onion, diced
  • 1 carrot, diced
  • 1 stalk celery, diced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 250g beef mince
  • 250g pork mince
  • 1.5 tbsp tomato paste
  • 1 can (400g) diced tomatoes
  • ½ cup milk
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp castor sugar
  • 500g gnocchi
  • Freshly grated parmigiano reggiano, to serve

method

  1. Heat oil in a large pot over medium to high heat. Add diced onion, carrot and celery and sauté until soft and translucent. Add garlic and oregano and sauté for a further two minutes.
  2. Make a space in the centre of the pot and add pork and beef mince. Cook until brown. Add tomato paste and stir through. Cook off for 2-3 minutes.
  3. Add diced tomatoes, milk, salt, pepper and sugar and stir well. Reduce heat to a simmer and cook for 30 minutes.
  4. Cook gnocchi according to packet instructions. To serve, divide gnocchi among four bowls. Top with a scoop of Bolognese sauce and sprinkle with cheese.
